Fabio, I have questions about salt. Kosher, Sea Salt & Iodized. 1.) When should you use which type for what…. cooking, baking, seasoning…? etc.
A: Kosher Salt- you really can use this in all cooking ! You can use it with your protein…or sweets…and anything in between Crystalline Sea Salt – add this type of salt to food you JUST made…great to add on top of fish ! Iodized Salt- better for baking since the grains are so fine

A: I have a few secrets up my sleeves You always want to cook potatoes starting from cold water- this will prevent them from crumbling. The secret to perfect gnocchi is starting from a cold potato. You want to mix the dry ingredients first, then SLOWLY add the potato. The perfect ratio of ingredients is 3 pounds of potatoes to 2 cups of flour to 1 cup of Parmesan cheese. Don’t forget a pinch of ground nutmeg too !
