Pear & Cheese Muffins
Ingredients:
3 cups sifted Flour
3.5 Tbsp of baking powder
1 Tbsp of Sugar
1 Tsp of salt
1 Egg
1.5 cup of Milk
1 cup grated Parmesan Cheese
1 cup of very small diced Pear
3 Tbsp of melted Butter
1 cup Balsamic Vinegar
¼ cup of corn syrup
Directions:
1. Place the Balsamic to reduce on the stove in a small sauce pot and reduce till is 1/3
2. Add the corn Syrup and let cool down
3. Mix all the Dry ingredients in a bowl including the cheese
4. Mix Egg, Butter and Milk together
5. Add liquid to the dry ingredients
6. Fill greased Muffin tins ½ full and add some pieces of Pear
7. Now cover the Pear till the tins are about 2/3 of the capacity
8. Bake at 440/450 for 25/30 minutes according to your oven heat and convection features
9. Serve as side dish or Appertizer
