Gumbo for Vegetarians

Ingredients: 

2 tbsp Flour
3 tbsp Olive oil
1 chopped Onion
1 chopped Green Bell Pepper
2 chopped Celery stalks
Salt and Pepper
1 tbsp Worcestershire Sauce
1 tbsp File Powder
1 tsp smoked Paprika
2 cups Vegetable broth
1 lb chopped Baby Collard Green
10 oz frozen Black-eyed peas

Directions:

  • Cook 2 tablespoons flour in 3 tablespoons olive oil until golden, about 3 minutes.
  • Add 1 chopped onion, 1 chopped green bell pepper, 2 chopped celery stalks, and salt and pepper; cook until soft, about 8 minutes.
  • Stir in 1 tablespoon Worcestershire Sauce, File Powder, and 1 teaspoon smoked paprika, then add 2 cups vegetable broth.
  • Bring to a boil and add 1 pound chopped Baby Collard Green and 10 ounces frozen black-eyed peas; simmer until tender; 15 minutes.
