Orzo Pasta Salad
Serves 4 to 6
1 pound orzo
4 scallions –thinly sliced
½ cup sun dried tomatoes packed in oil-drained & thinly sliced
20 basil leaves –thinly sliced
Juice from ½ lemon
1/3 c extra virgin olive oil
1 cup pine nuts -toasted
Salt and freshly ground black pepper, to taste
1) Bring a medium pot of salted water to a boil and cook the orzo until al dente.
2) In a large bowl whisk together the olive oil and lemon juice. Add the scallions, tomatoes and basil and set aside.
3) Drain the orzo well and add to the bowl with the dressing together with the pine nuts. Toss to coat well, adjust seasonings with salt and pepper and serve at room temperature or chilled.
