Pollo Ubriaco (Drunken Chicken)

Servings: 4

1 Whole 2lbs Chicken or 2 1.5 lbs Hen i like them skin off
1/4 cup flour
2 tsp salt
1/4 tsp pepper
10 slices pancetta
2 onions
1 lb mushroomsOyster or Button
4 carrots diced
1/2 cup chicken broth
2 cup red wine
1/2 cup tomato sauce or pureed fresh tomato
3 garlic cloves crushed
2 tbsp Butter

Directions:

Season the Chicken with Salt and Pepper and coat in flour
In large skillet fry diced Pancetta until crisp, set aside
In the same Skillet Brown chicken in 2 Tbsp of Melted Butter
Remove to a plate.
Add diced onions and sliced mushrooms to the skillet and cook until onions are tender.
Return chicken pieces to skillet (or you can place this in a large oven-proof baking dish).
Add remaining ingredients, including pancetta bits.
Cover and simmer about 1 hours, or until chicken is tender.
Skim off excess fat.
