Smoked Salmon & Lime Crème Almost Scrambled

Ingredients:

6oz of smoked Salmon sliced paper thin
1 Tbsp of Bertolli ExtraVirgin Olive Oil ( or any other Oil that has a pronounced Olive flavor )
Juice of ½ Orange
½ Tsp of fresh grounded Black Pepper
Dash of Cayenne Pepper
Salt to taste
8 Eggs
1 cup of Sour Cream
¼ cup of Lime juice
1 cup of Mascarpone Cream
1 Tbsp of Chopped Chive
1 Tbsp of Butter

Directions:

1. Marinate the Salmon with the Olive Oil, the Orange juice and the Black Pepper, Cayenne and salt it also but very lightely
2. Mix the Sour Cream with the Lime Juice and the Chive
3. Beat the Eggs with the Mascarpone and few pinches of salt
4. Heat a Non-Stick pan with the butter and scramble the eggs gently on low fire till “easy” you want them moist, you want them more together than scramble, you definitely don’t want all bunch of pieces in your Saute Pan
5. Display the Eggs on a platter and top with the Salmon and the Lime Creme
