Spicy Asparagus & Fried Eggs
1 lb asparagus
2 tbsp olive oil
2 Tbsp. Grated Parmesan
Dash of Tabasco
Cracked Black Pepper
1. Trim woody ends of the asparagus and blanch in boiling water for 2-3 minutes.
2. Meanwhile, heat a little olive oil in a large pan. Add 2 eggs and fry over a medium-low heat until whites are set. Repeat with remaining eggs.
3. Drain the asparagus, shake some Tabasco, sprinkle Parmesan, and divide the spears between the plates. Season with Salt and pepper and Serve.
