Strawberry & Balsamic Mascarpone Crepes

Ingredients:
Special Crepes Batter:
3 eggs
1 cup milk
1 cup all-purpose flour
6 tsp butter, melted
1 tbsp sugar
1/2 tsp vanilla extract
Pinch of salt
Filling:
1 cup Mascarpone cheese
1 tbsp sugar
4 tsp minced fresh mint
1 tsp lemon juice
2 cups diced strawberries
½ cup aged balsamic Vinegar the older the better
Directions:
1) In a blender, combine the batter ingredients; cover and process until smooth
2) For filling in a bowl, combine the cheese, sugar, mint and lemon juice
3) Gently fold in strawberries
4) Cover and refrigerate for at least 1 hour
5) Melt 1 tsp butter in an 8-inch nonstick skillet over medium heat; pour about 1/4 cup butter into the center of skillet. Lift and tilt pan to coat bottom evenly
6) Cook until top appears dry; turn and cook the other side
7) Remove to a wire rack
8) Repeat with remaining batter
9) Spoon filling over crepes and fold
10) Drizzled with balsamic vinegar
