Tarragon & Bacon Scrambles

Ingredients:

5 Eggs
1 Tsp of Salt
½ Tsp of White Pepper
½ cup of Heavy Cream
1 Tbsp of Bertolli Extra Virgin Olive Oil
2 Tbsp of grated Parmesan Cheese
2 cup of diced Bacon
½ cup of diced Shallots
1 Tbsp of fresh Tarragon leaf
1 Tsp of Butter

Directions:

1. Caramelize the Bacon in a Non-Stick Pan with the butter and the Shallots
2. Beat all the Ingredients together but the Strawberry mixture in a Vitamix Blender at High Speed for about 2-3 minutes
3. Add the Tarragon leaf roughly chopped to the Eggs mixture and pour into the pan
4. Cook in a Non-Stick Pan on Low fire till set on easy
5. Serve with Bagels or Croissant with a sprinkle of Sea Salt
