Zucchini & Pinenuts Bread

Ingredients:

3 Eggs
¾ cup of Sugar
1 cup Bertolli Extravirgin Olive Oil or any other Extravirgin Olive Oil
2 cups of grated Zucchini skin and all, you can do the in a Food processor
3 cups of Flour
1.5 tsp of Salt
1 tsp of Baking Soda
¼ tsp of Baking Powder
½ cup of Pinenuts

Directions:

1. Mix all the ingredients together
2. Divided into 2 separated Loaf pans and bake at 325/350 for about 45 minutes to 1 hour
